Simple cast iron roasted salsa

Simple cast iron roasted salsa.

Ingredients:

3 Tomatoes
2 Jalapenos (you only need one. The other is to kick up the heat!)
1/2 white onion
1/2 cup of chopped Cilantro (you can add more if you like)
Juice of 1/2 a lime
1 garlic clove (optional)
Salt and pepper to taste


Heat up a cast iron skillet on high. Roast the tomatoes, jalapenos and onions until slightly charred on all sides. About 5-10 mins. You can core your tomatoes before or after you cook them. Pulse in a blender depending on how chunky or smooth yo want it. Transfer to a bowl add lime juice, cilantro, salt and pepper. Stir and let stand for 15 mins. or so. Should last about a week in the fridge. Buen Provecho!

Try this:
1/4 Tsp ground corriander
1/2 Tsp ground cumin
1 Tsp chile ancho powder

Mango

Mangoes are good! A fantastic tropical fruit. What's not to like. Sweet, tasty and smooth. Enjoy multiple ways.

-Peel and eat
-Put some powdered chile on it
-In a fruit salad
-In salsa
-Dried
-With rice pudding
-In a shake
