A little Spanish influence. Smooth, rich and tasty. One excellent salsa. Great with grilled or broiled chicken, pork and seafood. Another recipe to have in your recipe arsenal. Cook something new. Eat good food! Tex-Mex Rocks!

Balsamic Vinaigrette

A basic sweet vinaigrette. Great over tomatoes and fresh mozzarella. Fantastic grilling marinade for chicken and pork. Homemade is always better. Buen Provecho!

Simple cast iron roasted salsa

Simple cast iron roasted salsa.

Ingredients:

3 Tomatoes
2 Jalapenos (you only need one. The other is to kick up the heat!)
1/2 white onion
1/2 cup of chopped Cilantro (you can add more if you like)
Juice of 1/2 a lime
1 garlic clove (optional)
Salt and pepper to taste

Heat up a cast iron skillet on high. Roast the tomatoes, jalapenos and onions until slightly charred on all sides. About 5-10 mins. You can core your tomatoes before or after you cook them. Pulse in a blender depending on how chunky or smooth yo want it. Transfer to a bowl add lime juice, cilantro, salt and pepper. Stir and let stand for 15 mins. or so. Should last about a week in the fridge. Buen Provecho!

Options and Variations:

Try this:
1/4 Tsp ground corriander
1/2 Tsp ground cumin
1 Tsp chile ancho powder

Easy recipe for fresh salsa. A good base salsa fresca. Put it on tacos, quesadillas, grilled meats, seafood, veggies, or anything you desire. I like it with tortilla chips. I guarantee you will be making this salsa over and over again! Share it or it all.
